Una de las tareas m\u00e1s importante es el <strong>amasado<\/strong>, donde se crea la estructura del pan. El <strong>amasado<\/strong> es una t\u00e9cnica tradicional que consiste en mezclar los ingredientes necesarios, es decir harina y agua, donde la masa gana elasticidad e incorpora aire. Antiguamente <strong>se amasaba manualmente<\/strong>, ahora disponemos de m\u00e1quinas amasadoras, con las cuales se logra una masa m\u00e1s homog\u00e9nea y cohesionada, aparte de ahorrar mucho trabajo.<\/p>\n<p>Durante el amasado los componentes de la harina, pierden su individualidad y dotan a la masa unas caracter\u00edsticas de fuerza y equilibrio, a medida que va avanzando el amasado, se forman unos microalv\u00e9olos que ser\u00e1n m\u00e1s tarde los encargados de almacenar el gas que se producir\u00e1 durante el per\u00edodo de fermentaci\u00f3n.<\/p>\n<p>La <strong>amasadora<\/strong>\u00a0ayudar\u00e1 a que el proceso de elaboraci\u00f3n del pan sea perfecto. Pero, nunca se podr\u00e1 sustituir el oficio tradicional y el conocimiento del panadero.
