Entre las hojas secas, creciendo en los troncos de los \u00e1rboles o en la madera podrida, podemos encontrar muchas setas que son comestibles, aunque hay que tener cuidado, ya que la mayor\u00eda se confunden f\u00e1cilmente. Por eso aconsejamos recoger solo las especies que conozcamos a la perfecci\u00f3n. <\/p>\n\n\n\n<p>En Andaluc\u00eda tenemos zonas micol\u00f3gicas importantes: en plena Sierra Morena (C\u00f3rdoba), en el Parque Natural Los Alcornocales (C\u00e1diz), en la Serran\u00eda de Ronda (M\u00e1laga), en el And\u00e9valo y la Sierra de Aracena (Huelva) y en el Parque Natural Sierras de Cazorla, Segura y Las Villas (Ja\u00e9n). Aunque, en cualquier bosque  andaluz podemos encontrar setas entre las hojas secas y los troncos de los \u00e1rboles. <\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"640\" height=\"480\" src=\"https:\/\/www.hornoalmadain.com\/wp-content\/uploads\/2023\/10\/setas-y-pan-artesano.jpg\" alt=\"setas y pan artesano\" class=\"wp-image-17382\" srcset=\"https:\/\/www.hornoalmadain.com\/wp-content\/uploads\/2023\/10\/setas-y-pan-artesano.jpg 640w, https:\/\/www.hornoalmadain.com\/wp-content\/uploads\/2023\/10\/setas-y-pan-artesano-300x225.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/figure>\n<\/div>\n\n\n<p>La <strong>setas y la casta\u00f1as<\/strong> comparten muchos aspectos en com\u00fan. Pertenecen a la misma estaci\u00f3n y comparten los mismos parajes. La <strong>casta\u00f1a<\/strong> es el fruto seco m\u00e1s rico en hidratos de carbono complejos y, en especial, en almid\u00f3n, mientras que las <strong>setas<\/strong> aportan cantidades interesantes de f\u00f3sforo, potasio, hierro, cobre y cinc.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>La<\/strong> <strong>Tana \u00b7 Amanita Caesarea:<\/strong>&nbsp;que suele encontrarse en el Parque Natural de Sierra de Aracena y Picos de Aroche. Tambi\u00e9n puede encontrarse en la Sierra Norte de Sevilla. Se suelen consumir crudas en peque\u00f1as l\u00e1minas en ensaladas o pizzas. Tambi\u00e9n suelen ser muy habituales en los revueltos.<\/li>\n\n\n\n<li><strong>Gallipierna \u00b7 Macrolepiota procera<\/strong>: es aut\u00f3ctona de las provincias de&nbsp;C\u00e1diz, C\u00f3rdoba, Ja\u00e9n, Granada, Huelva y M\u00e1laga. Se suelen usar&nbsp; en la cocina para los fritos,<\/li>\n\n\n\n<li><strong>Seta anisada \u00b7 Clitocybe odora:<\/strong>&nbsp;se usan para hacer postres y helados.<\/li>\n\n\n\n<li><strong>Tentullo \u00b7 Boletus aereus:<\/strong>&nbsp;esta seta se encuentra en la Sierra de Aracena y Picos de Aroche y Sierra Norte de Sevilla. Estas setas son deliciosas a la plancha y en croquetas.<\/li>\n\n\n\n<li><strong>N\u00edscalo \u00b7 Lactarius deliciosus:<\/strong>&nbsp;se encuentra en toda Andaluc\u00eda en los bosques de pinos.
