Que se procede a diversos refrescos con el fin de incrementar la microflora natural que contiene la propia harina y poder as\u00ed fermentar la masa. <\/p>\n\n\n\n<p>La <strong>masa madre<\/strong> es la responsable de que el pan presente un aroma y sabor t\u00edpicos a pan. Facilita una mejor conservaci\u00f3n de la corteza del pan y una miga cremosa. Aumentando al mismo tiempo la digestibilidad del pan. <\/p>\n\n\n\n<p>En Espa\u00f1a se ha pasado de un uso tradicional de <strong>masa madre<\/strong> a su sustituci\u00f3n por masa panarias fermentadas, sustitutos de masas madres, levadura prensada y mejorantes panarios. Productos comerciales <strong>que intentan obtener los beneficios de la masa madre pero sin conseguirlo<\/strong>. En <strong>Horno Al-Madain <\/strong>siempre hemos apostado por la utilizaci\u00f3n de la <strong>masa madre<\/strong>, por su capacidad de mejorar la calidad y la conservaci\u00f3n del pan.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"640\" height=\"480\" src=\"https:\/\/www.hornoalmadain.com\/wp-content\/uploads\/2023\/07\/masa-madre3.jpg\" alt=\"masa madre\" class=\"wp-image-16806\" srcset=\"https:\/\/www.hornoalmadain.com\/wp-content\/uploads\/2023\/07\/masa-madre3.jpg 640w, https:\/\/www.hornoalmadain.com\/wp-content\/uploads\/2023\/07\/masa-madre3-300x225.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/figure>\n<\/div>\n\n\n<p>La <strong>MM<\/strong> aporta una m\u00e1s larga duraci\u00f3n de la conservaci\u00f3n del pan a causa de la mayor acidez de la masa. Una miga m\u00e1s cremosa y con las paredes de los alveolos m\u00e1s el\u00e1sticos. Aroma y sabor caracter\u00edsticos. Una mayor digestibilidad, facilitando la labor del aparato digestivo. Proporcionando sus caracter\u00edsticas beneficiosas al pan.
