El pan es un alimento b\u00e1sico en nuestra dieta, sin embargo, es un problema para  aquellas personas que no pueden digerir una de sus prote\u00ednas m\u00e1s importantes: <strong>el gluten<\/strong>.&nbsp;El&nbsp;<strong>pan sin gluten<\/strong>&nbsp;es un pan elaborado con harinas que no tienen este elemento en su composici\u00f3n. &nbsp;El&nbsp;<strong>gluten&nbsp;<\/strong>es la semilla que se encuentra en multitud de cereales como el<strong>&nbsp;trigo, la cebada, el centeno, la espelta<\/strong>&nbsp;o algunas variedades de la&nbsp;<strong>avena<\/strong>.<\/p>\n\n\n\n<p>La enfermedad cel\u00edaca es un trastorno que afecta al 1% de la poblaci\u00f3n. que&nbsp;hay <strong>m\u00e1s de 500.000 personas que sufren celiaqu\u00eda<\/strong>&nbsp;y m\u00e1s del 70% no saben que lo son. Sobre todo, es importante tener el m\u00e1ximo de informaci\u00f3n <strong>para facilitar la correcta realizaci\u00f3n de la dieta sin gluten<\/strong>. <\/p>\n\n\n\n<p>La <strong>celiaqu\u00eda<\/strong> es una enfermedad que ocasiona cambios de por vida en los individuos que la padecen. Esto se debe a su imposibilidad de incluir&nbsp;<strong>gluten<\/strong>&nbsp;en la dieta diaria. la&nbsp;<strong>celiaqu\u00eda no tiene grados. Y, somos conscientes de <strong>hacer todo lo posible para elaborar un pan que colabore en la calidad de vida de todos los cel\u00edacos. <\/strong><\/p>\n\n\n\n<p>De momento<strong> estamos haciendo pruebas con<\/strong> <strong>el alforf\u00f3n o trigo sarraceno<\/strong>, un tipo de harina muy primitiva y sin gluten. Que pertenece a la categor\u00eda de los \u00abpseudocereales\u00bb diferente a las gram\u00edneas, pero que tienen composiciones similares.
